Description
Papaya is a tropical fruit of great economic importance, especially in Costa Rica, where current consumers seek smaller, sweeter varieties. In this context, the Suerre papaya (INTA-UCR 1785) has emerged as a promising alternative due to its smaller size, greater firmness, and tolerance to diseases such as anthracnose, making it attractive for export.
This project aims to analyze and comprehensively characterize the Suerre variety, evaluating its agronomic, phenological, physicochemical, and colorimetric characteristics to improve fruit quality and understand the interrelationship between these variables. This analysis is essential, as the Costa Rican papaya sector's reliance on a single hybrid material like Pococí exposes market fragility and highlights the need for diversification to maintain international competitiveness.
The research includes evaluating the color progression of the papaya during ripening using differential colorimetry techniques, as well as studying other important variables such as length and diameter, weight, texture, ash content, proteins, fats, carbohydrates, among others. These analyses will provide valuable information to establish quality standards that facilitate both post-harvest handling and acceptance in demanding markets.
The importance of this study lies in the potential to enhance this papaya variety to meet global market demands, as well as its adoption by local producers, thereby contributing to the strengthening of Costa Rica's agricultural sector and the sustainability of papaya production in the country.

Caracterizar integralmente el cultivo y la postcosecha de la papaya Suerre, evaluando sus características agronómicas, fenológicas, físico-químicas y colorimétricas, con el fin de mejorar la calidad de la fruta y comprender la interrelación entre estas variables.
